Nutty no-bake brownie bites (with freeze-dried raspberries, almond meal, hemp hearts, pecans, and dark chocolate.) This is a small batch recipe that will make 8 servings. Perfect as a deliciously decadent after dinner treat that you can still feel good about eating!

Base
Mix the almond meal, hemp hearts, cocoa powder, melted coconut oil, maple syrup, and freeze-dried raspberries in a bowl until combined.
Roughly chop the first measure of nuts and chocolate chips and stir through the mixture. (If you feel it isn't holding together you can always add a little more coconut oil.)
Line a small loaf-tin with grease-proof paper and tip in the brownie mixture. Press down with the back of a spoon or a piece of scrunched up grease-proof paper until you have an even layer.
Topping 1
Melt the dark chocolate chips with the coconut oil and quickly spread over the base.
Topping 2
Sprinkle before chocolate sets with pecans, chocolate chips, hemp hearts and freeze-dried raspberries.
Pop into the fridge or freezer until set and cut into 8 squares with a sharp knife.
Delish!!
