A nutritious twist on a classic favourite with the perfect blend of flavours. These falafels are a delicious plant-based meal option packed with the goodness of hemp, chickpeas, and fresh vegetables. A wonderfully versatile recipe which can be made into balls, patties, or burgers.
These are the real deal, made from scratch using dried chickpeas. It may sound like a faff but really, it involves no more extra work than soaking in water overnight, works out cheaper than canned chickpeas, and produces a superior falafel.
The next day, it's just a matter of tossing all the ingredients into a food processor. Easy peasy!

Using a food processor, shred the garlic, onion and carrot.
Add the drained chickpeas, coriander, flour, first measure of hemp hearts, lemon juice and spices, and pulse until the mixture reaches desired consistency.
Sprinkle the remaining remaining hemp hearts and flour on a plate. This is your coating. Using your hands, gently roll the falafel mix into golf-ball sized balls. (If you are finding the mixture too moist, you can always stir through a little extra flour.)
Shallow fry the balls in a frypan, gradually turning to cook evenly on all sides. Don't try to rush this step... better to go a little slowly to ensure all of your falafel are a beautiful golden colour.
