Blueberry Protein Oatcake

Fuel your day with freshly baked Blueberry Protein Oatcake.  A powerhouse of nutrition combining the goodness of oats, milk, egg, and protein powder. Packed with the wholesome crunch of hemp hearts and a burst of sweetness from blueberries, this recipe is a delicious way to kickstart your morning. Whether you choose to bake it in an air fryer or in the oven, each large serving boasts around 25g of protein, making it the perfect fuel for your active lifestyle. Simple, nutritious, and satisfying!  (This recipe makes 2 large servings or 4 smaller servings)

Double the recipe for a larger batch, best done in the oven!

Ingredients

 1 cup rolled oats
 1 scoop Vanilla Protein (Whey or plant-based)
 1 tbsp Hemp Protein
 1 tsp baking powder
 1 pinch salt
 1 cup milk (your choice of dairy or plant-based)
 1 beaten egg
 ½ cup blueberries (if frozen, defrost first)
 1 tbsp maple syrup (optional)
Topping
 1 sprinkle of extra blueberries
 2 tbsp hemp hearts

Directions

Add the dry ingredients to a bowl, and stir to combine.

Add the beaten egg, milk, and maple syrup (if using) and mix well until combined with the dry ingredients, gently fold in the blueberries to finish.

Pour into a lined air fryer baking tin and top with extra blueberries and hemp hearts. Alternatively, bake in the oven in a small, lined baking dish.

Bake at 180C for 20-25 mins until cooked through.

Remove from oven to cool slightly and slice. This recipe works well for food preppers!

Enjoy warm on its own or serve with yoghurt and extra fruit.
