Sweet & Salty Hemp Bars

Oh my gosh... these are soo... good! If you like that sweet and salty hit these nut bars are a real winner. Best kept in the fridge or freezer until required. This recipe can be made into squares, bars, or rolled into balls. Your choice!

Ingredients

  • ½ cup hemp seeds
  • ½ cup sesame seeds
  • ½ cup desiccated coconut
  • ½ cup sunflower seeds
  • ½ cup tahini (can use peanut butter instead)
  • 2 cups dates
  • ¾ tsp salt

Directions

  1. Add the seeds and coconut to a food processor and pulse a few times to combine.
  2. Add the dates, peanut butter, and sea salt and process until it resembles a crumbly dough.
  3. Line a square baking pan and press the dough firmly into the pan. It’s worth taking your time to do this step properly. Using the back of a large spoon helps.
  4. Place the pan in the freezer for 3 hours to firm up.
  5. Lift the bars out of the pan and cut them into bars or squares.
  6. Bars do not freeze solid and are best served straight from the freezer.
  7. The recipe can be doubled to fit into a large rectangular pan.
  8. The recipe can be made into balls instead of slices if preferred.
