There are conflicting stories told as to why Anzac biscuits became so popular. One story suggests that biscuits were sent by wives and women’s groups to soldiers abroad since the ingredients didn’t spoil easily and the biscuits remained fresh despite shipping. Another story says that they were baked by Australians and Kiwis in order to raise funds for the war. There is evidence to suggest that indeed soldiers were sent homemade biscuits during World War I, and history points to the Anzac biscuit recipe. Both stories are precious and important to remember those difficult times. We've recreated these delicious historical treats for you to try... ANZAC biscuits with a hemp seed twist … Enjoy!

Ingredients

  • 125 g Butter
  • 2 tbsp Golden syrup
  • 2 tbsp Boiling water
  • ½ tsp Baking soda
  • 1 cup Rolled oats
  • 1 cup Plain flour
  • 1 cup Brown sugar
  • ½ cup Desiccated coconut
  • ¼ cup Hemp Hearts

Directions

  1. Mix flour, sugar, coconut, Hemp Hearts and rolled oats together.
  2. Melt butter and golden syrup in a pot, dissolve baking soda into boiling water and add to the butter and the golden syrup. This will froth up so work quickly, stir butter mixture into dry ingredients, mix well.
  3. Roll tablespoons of mixture into balls; place 5cm apart on lined trays, then flatten slightly.
  4. Bake for 10-12 minutes at 180C or until golden. Keep an eye on them!!
