Add walnuts, hemp hearts, chopped onion, garlic, and mushrooms to a food processor and pulse until you have a coarse mixture.
Heat oil in a fry pan and add the mushroom mixture. Sauté for 7-9 minutes, making sure to keep it moving to avoid it sticking.
While that’s cooking, pulse the drained black beans in the food processor until coarsely chopped.
Remove the pan from the heat and allow the mixture to cool for several minutes before stirring in the remaining ingredients.
Mix well to combine, transfer to a bowl, and chill the burger mixture for 20 minutes to an hour.
Divide the mixture into 4-6 portions, (depending on your bun size), and form into burgers. You might want to wet your hands for this part so the mixture doesn’t stick to your hands.
Add a drizzle of oil to a large non-stick frypan, and cook burger on a medium-high heat for 4-5 minutes on each side.
Dress up your bun of choice with whatever toppings you have on hand, and there you have it! Amazing. Vegan. Burger!!
