Whether you've run out of bread or you love to create from scratch using wholefood ingredients we think you'll love this quick and delicious muffin recipe. It's best made in a large ramekin and sliced through the middle for 2 muffin-sized rounds, but can also be made in a mug and sliced into smaller servings.
This is the basic recipe, which is perfect for topping with a poached egg, an avocado or your favourite spreads. If you want to get fancy you can add sweeteners, spices, nuts, raisins etc.

Combine the almond meal, hemp hearts, flax meal, baking powder and salt in a large ramekin or coffee mug.
Mix in your egg and fat/oil/butter.
Microwave on high for 60 - 90 seconds depending on the power of your microwave. A bit longer if you've added lots of other ingredients, like cheeses, nuts, frozen berries, etc.
Can also be baked in the oven of course but then... it will be a bit longer than a minute 😉
