Vegan Mushroom Hemp Burger

Vegan Mushroom Hemp Burger

Cook Time: 5 mins

Introducing, hands down, our best vegan burger to date. Let’s be honest… there’s a lot of sub-par vegan burgers out there. Not this one. It holds together, it looks like a burger, it’s packed full of tasty flavour, and it has a solid meaty, feel to it. Full of mushrooms, beans, walnuts, hemp hearts & protein.

This mixture will make 4 super-size burger patties, or 6 smaller ones.

Ingredients

  • ½ medium onion
  • 2 cloves garlic
  • 300 g mushrooms (we used brown)
  • ½ cup walnuts
  • ½ cup hemp hearts
  • 2 tbsp hemp protein powder
  • 1 can drained black beans (we used Ceres Organics)
  • 100 g (or 1 cup) fresh bread crumbs
  • 1 egg (or flax egg)
  • 2 tsp Worcestershire sauce (or alternative)
  • 1 tsp salt
  • 2 tsp oil for frying

Directions

  1. Add walnuts, hemp hearts, chopped onion, garlic, and mushrooms to a food processor and pulse until you have a coarse mixture.
  2. Heat oil in a fry pan and add the mushroom mixture. Sauté for 7-9 minutes, making sure to keep it moving to avoid it sticking.
  3. While that’s cooking, pulse the drained black beans in the food processor until coarsely chopped.
  4. Remove the pan from the heat and allow the mixture to cool for several minutes before stirring in the remaining ingredients.
  5. Mix well to combine, transfer to a bowl, and chill the burger mixture for 20 minutes to an hour.
  6. Divide the mixture into 4-6 portions, (depending on your bun size), and form into burgers. You might want to wet your hands for this part so the mixture doesn’t stick to your hands.
  7. Add a drizzle of oil to a large non-stick frypan, and cook burger on a medium-high heat for 4-5 minutes on each side.
  8. Dress up your bun of choice with whatever toppings you have on hand, and there you have it! Amazing. Vegan. Burger!!
